Pork Vindaloo

Although this is a Goan dish, it is a beautiful example of Portuguese influence on Indian cuisine. The pork vindaloo is a spicy curry that is served best with rice, on the side.

Ingredients
1kg Pork Meat – cut into 2 inch pieces and cooked
200gm Chopped Onions
1/2tsp Turmeric Powder
1/2tsp Pepper Powder
Salt as per taste
1/2tsp Sugar
4tbs Vinegar
Juice of one lemon sized ball of tamarind
2pieces of cinnamon
10 cloves
500ml water

Spice Paste Ingredients
14 flakes of garlic
2 small pieces of ginger
20 medium sized red chillies
1tsp cumin seeds

Preparation
Heat a pan. Fry the pork pieces for 2 minutes. Add the chopped onions and sauté well. Add turmeric powder and pepper powder. Mix well. Now add whole cloves and cinnamon pieces. Add the ground paste and sauté well. Now, add vinegar, tamarind juice and water. Cook till the gravy becomes thick. Add sugar and mix well. Serve hot.
