Coconut Tart Recipe

Ingredients

  • 2 coconuts
  • 2 tbsp white flour
  • 1 tsp vanilla
  • 100 ml water
  •  25 gms raisins
  • 250 gms sugar
  • 8 egg yolks
  • 2 tbsp clarified butter
  • 40 gms cashew nuts
  • Salt to taste

Method

Grate the coconuts, and grind slightly.  Add sugar and 100 ml of water.   Cook until it is dry and sticky.  When cold, add egg yolks, flour, clarified butter, salt, cashew nuts, raisins and vanilla essence.  Mix well and keep aside.

Crust

  • 100 gms white flour
  • 1 tsp clarified butter
  • Salt to taste
  • Water-as required

Mix flour, clarified butter, salt and water and knead until the dough is soft.  Grease the dart (7 ½ inches diameter in size), cover with pastry, put the filling and bake until brown in a pre-heated oven.
